Creamy Vegan Pea Soup with Crispy Capers

This dish is inspired by an English summer. Yes, that’s right, a soup can be summery! Fresh garden peas are an underrated veggie but grow in abundance in the UK. A few years ago, I was fortunate enough to go and see peas being harvested and learned how to cook exciting, incredibly tasty dishes from what is often an overlooked member of the legume family. Picking and eating them fresh from the field shed new light on the humble pea, which is sweet and utterly addictive when eaten straight from the pod. Later that week, I was treated to a Michelin Star experience with chef George Blogg at Gravetye Manor in West Sussex, who served a pea velouté with crispy capers as an amuse-bouche. This two-bites-of-heaven dish was so good I have never forgotten it and just had to try and recreate it all these years later in an adapted vegan version.
In addition to capers, I always like to garnish this soup with pea shoots, which are readily available from most major supermarkets and greengrocers. Pea shoots are full of pea flavour, often more than the pea itself! They add yet another layer of taste to this flavour bomb of a dish, which couldn’t be easier to make. No experience is required to master this easy soup!
